Ingredients for 4

  • Baby back ribs (1 rack)

  • Salt

  • Garlic paste (2 garlic cloves)

  • Char siu sauce (LEE KUM KEE or homemade)

Directions

  • Step 1

    Add salt and cut rack in half.

  • Step 2

    Place your ribs on individual bags (or make sure they don't overlap and are flat on the bag). Get ready the garlic paste and char siu sauce.

  • Step 3

    Rub the ribs with garlic paste and add two generous spoons of char siu sauce to each side of your ribs. Tip: place your bagged ribs vertically into a container to avoid spilling sauce.

  • Step 4

    Vacuum seal your ribs carefully to find spilled sauce. Tip: reserving your ribs marinating overnight or for a couple of hours before cooking intensifies the flavor and color.

  • Step 5

    Add your ribs to your preheated water at 167 F, set your 4 hours timer and let them cook for 4 hours.

      Pad dry your ribs with paper towels.

      Brush your cooked ribs with more char siu sauce and finish in the oven at 400 degrees for 10 minutes.

      Remove from the oven, cur, and enjoy your ribs.
