Easy Chinese BBQ Style Spare Ribs (Char Siu)

Ingredients
- Baby back ribs (1 rack)
- Salt
- Garlic paste (2 garlic cloves)
- Char siu sauce (LEE KUM KEE or homemade)
Directions
- Add salt and cut rack in half.
- Place your ribs on individual bags (or make sure they don't overlap and are flat on the bag).
Get ready the garlic paste and char siu sauce.
- Rub the ribs with garlic paste and add two generous spoons of char siu sauce to each side of your ribs.
Tip: place your bagged ribs vertically into a container to avoid spilling sauce.
- Vacuum seal your ribs carefully to find spilled sauce.
Tip: reserving your ribs marinating overnight or for a couple of hours before cooking intensifies the flavor and color.
- Add your ribs to your preheated water at 167 F, set your 4 hours timer and let them cook for 4 hours.
Finishing Steps
- Pad dry your ribs with paper towels.
- Brush your cooked ribs with more char siu sauce and finish in the oven at 400 degrees for 10 minutes.
- Remove from the oven, cur, and enjoy your ribs.
