Ingredients for 0

  • Chicken breast

  • Lemon zest

  • Pepper

  • Salt

  • Thyme

  • Rosemary

  • Olive oil

  • Butter

  • Grapeseed oil (or any other oil with a high smoke point)

Directions

  • Step 1

    Preheat the water bath to 63,6 degrees Celsius.

  • Step 2

    Rub the olive oil on the chicken breast.

  • Step 3

    Season with salt, pepper, lemon zest.

  • Step 4

    Put the chicken breast in a vacuum bag with fresh rosemary, thyme and a little butter. Vacuum seal the bag.

  • Step 5

    Put the chicken in the water bath and set timer to one hour.

  • Step 6

    After one hour. Take out the chicken and try dabbing them as dry as possible.

  • Step 7

    Heat some (grapeseed oil) oil and butter in the pan, sear the chicken (about one minute each side), take out, cut it up, ready for serve!
