Ingredients
- Chicken breast
- Lemon zest
- Pepper
- Salt
- Thyme
- Rosemary
- Olive oil
- Butter
- Grapeseed oil (or any other oil with a high smoke point)
Directions
- Preheat the water bath to 63,6 degrees Celsius.
- Rub the olive oil on the chicken breast.
- Season with salt, pepper, lemon zest.
- Put the chicken breast in a vacuum bag with fresh rosemary, thyme and a little butter. Vacuum seal the bag.
- Put the chicken in the water bath and set timer to one hour.
- After one hour. Take out the chicken and try dabbing them as dry as possible.
- Heat some (grapeseed oil) oil and butter in the pan, sear the chicken (about one minute each side), take out, cut it up, ready for serve!
