Boneless Beef Short Ribs

Ingredients for 2
3 tbsp dried oregano
3 tbsp dried basil
2 tbsp dried parsley
2 tbsp dried thyme
1/2 tbsp coarse kosher salt
1 tbsp freshly ground black pepper
1 tbsp smoked paprika (or regular)
1 tbsp garlic powder
1 tbsp minced garlic
2 lbs boneless beef short ribs
Directions

Step 1
Rinse and pat dry all ribs. Let stand.

Step 2
In a small/medium bowl, combine all ingredients except for beef ribs and minced garlic. Mix well.

Generously season all sides of each rib

Step 4
Place ribs into sous vide bag. Add minced garlic to bag and shake well. Seal bag.

Step 5
Cook for 22 hours at 160 degrees F

Step 6
Reduce temp to 130 degrees F. Cook additional 2 hours.

Remove bag from water bath and set aside

Finishing Steps

Step 0
Take a nonstick pan or cast iron and heat over medium-high heat. Add 1-2 tbsp oil.

Step 1
Remove ribs from bag and sear each major side for 1 minute. Save the juices in the bag!

Step 2
(Optional) Pour the juices from the bag into a small sauce pot, add a couple teaspoons of corn starch, and whisk over medium heat until desired gravy consistency.
