  1. Rinse and pat dry all ribs. Let stand.
  2. In a small/medium bowl, combine all ingredients except for beef ribs and minced garlic. Mix well.
  3. Generously season all sides of each rib
  4. Place ribs into sous vide bag. Add minced garlic to bag and shake well. Seal bag.
  5. Cook for 22 hours at 160 degrees F
  6. Reduce temp to 130 degrees F. Cook additional 2 hours.
  7. Remove bag from water bath and set aside

Finishing Steps

  1. Take a nonstick pan or cast iron and heat over medium-high heat. Add 1-2 tbsp oil.
  2. Remove ribs from bag and sear each major side for 1 minute. Save the juices in the bag!
  3. (Optional) Pour the juices from the bag into a small sauce pot, add a couple teaspoons of corn starch, and whisk over medium heat until desired gravy consistency.
  4. EAT!
