Boneless Beef Short Ribs

Ingredients
- 3 tbsp dried oregano
- 3 tbsp dried basil
- 2 tbsp dried parsley
- 2 tbsp dried thyme
- 1/2 tbsp coarse kosher salt
- 1 tbsp freshly ground black pepper
- 1 tbsp smoked paprika (or regular)
- 1 tbsp garlic powder
- 1 tbsp minced garlic
- 2 lbs boneless beef short ribs
Directions
- Rinse and pat dry all ribs. Let stand.
- In a small/medium bowl, combine all ingredients except for beef ribs and minced garlic. Mix well.
- Generously season all sides of each rib
- Place ribs into sous vide bag. Add minced garlic to bag and shake well. Seal bag.
- Cook for 22 hours at 160 degrees F
- Reduce temp to 130 degrees F. Cook additional 2 hours.
- Remove bag from water bath and set aside
Finishing Steps
- Take a nonstick pan or cast iron and heat over medium-high heat. Add 1-2 tbsp oil.
- Remove ribs from bag and sear each major side for 1 minute. Save the juices in the bag!
- (Optional) Pour the juices from the bag into a small sauce pot, add a couple teaspoons of corn starch, and whisk over medium heat until desired gravy consistency.
