  • Favorite rub or just salt and pepper

  • Mix of apple juice and water 50/50

Directions

  • Step 1

    Season well and put on smoker for about 3 hours

  • Step 2

    Vacuüm the racks and put in waterbath for 14 hours at 78°C

      After removing from bag, re-season well and put on smoker for another 2-3 hours untill a nice bark has formed. Spritz with apple juice mixed with water if they get to dry
