  2. Vacuüm the racks and put in waterbath for 14 hours at 78°C

Finishing Steps

  1. After removing from bag, re-season well and put on smoker for another 2-3 hours untill a nice bark has formed. Spritz with apple juice mixed with water if they get to dry
  2. Enjoy!
