Ingredients
- 2 racks beef ribs 3kg
- Favorite rub or just salt and pepper
- Mix of apple juice and water 50/50
Directions
- Season well and put on smoker for about 3 hours
- Vacuüm the racks and put in waterbath for 14 hours at 78°C
Finishing Steps
- After removing from bag, re-season well and put on smoker for another 2-3 hours untill a nice bark has formed. Spritz with apple juice mixed with water if they get to dry
