Ingredients for 4

  • Berkshire baby back ribs

  • Salt

  • Everglades cactus dust

  • Japanese 7 spice

  • Cosmo Rib Glaze

Directions

  • Step 1

    Smoke ribs naked for an hour

  • Step 2

    Salt and vacuum seal

  • Step 3

    Sous vide for 16-18 hours at 150°

  • Step 4

    Remove ribs from sealed bag and season

  • Step 5

    Set ribs on smoker at 275° until bark sets

  • Step 6

    Once bark has set coat with rib glaze and leave on smoker until sticky (30-45 minutes)

      Remove ribs from smoker and let rest for 15-20 minutes
