Berkshire baby back ribs done with the wombo combo. Fusing Sous vide and smoking with premium Berkshire pork ribs creates magic.

Ingredients
- Berkshire baby back ribs
- Salt
- Everglades cactus dust
- Japanese 7 spice
- Cosmo Rib Glaze
Directions
- Smoke ribs naked for an hour
- Salt and vacuum seal
- Sous vide for 16-18 hours at 150°
- Remove ribs from sealed bag and season
- Set ribs on smoker at 275° until bark sets
- Once bark has set coat with rib glaze and leave on smoker until sticky (30-45 minutes)
Finishing Steps
- Remove ribs from smoker and let rest for 15-20 minutes
