Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.
In a gallon size vacuum bag add salt and peppered loin, then a few sprigs of rosemary, garlic cloves, olive oil, a few pats of butter seal and place into vessel to begin cooking
Heat a large cast iron skillet add 2tbs butter and a drizzle of olive oil brown beef on all sides add additional butter if necessary and chopped rosemary. Roughly 4 mins each side
Plate and let rest 10 mins then slice
