Ingredients for 4

  • 1 x 400g fillet of beef

  • Glass of good Shiraz

  • 2 sprigs rosemary

  • 2 bay leaves

  • Glug of virgin olive oil

  • 1/2 T spoon Maldon sea salt flakes

  • 1 T spoon Fresh ground pepper

Directions

  • Step 1

    Allow beef to get to room temp. Dry and then roll in salt and pepper. Add wine, herbs, oil to silicone bag and add the beef. Place is preheated water bath for 3 hours.

      Sear for three minutes on a hot BBQ / griddle plate. Serve with Cafe de Paris butter.
