Ingredients for 2
100g Butter
1 Tablespoon Bearnaise Essensen
1 Egg Yolk
Estragon to taste
Directions

Step 1
Put bearnaise essensen, egg yolk and butter in a bag.

Put the bag in the sous vide for 30 min. (Never over 60 celsius or 140 fahrenheit) Use something to hold the bag in place at the top, so it dosen’t fall in to the water.

Step 3
Pour the content of the bag in to a cylindrical container. Preferably one that came with your hand blender.

Step 4
Now take a hand blender and start at the bottom of the container. Let the hand blender spin there for 10 seconds, after that you slowly start to pull it to the top. When you reach the top you are done.

Now just add estragon to taste, and mix it in with the rest of the sauce.
