Ingredients for 8

  • 6 short ribs

  • 1/2 cup apple cider vinegar

  • 4 tbsp minced garlic

  • 2 tbsp ground black pepper

  • 2 tbsp salt

  • 6 tbsp lime juice

  • 3/4 tbsp grounded cloves

  • 4 bay leaves

  • 6 Chipotle chilis in adobo

  • 6 tbsp sofrito (or marinara with garlic spices etc)

  • 2 pimentos (5 tbsp chopped pimento)

Directions

  • Step 1

    Mix all sauce ingredients except bay leaves in blender then set aside

  • Step 2

    Pre-sear short ribs

  • Step 3

    Vacuum seal short ribs along with the sauce and bay leaves. Double seal ends and double bag!

  • Step 4

    Weigh the meat down in water bath to prevent from floating.

      Drain juices into bowl. Remove meat from bags and remove bones. Use forks to separate the meat, then add meat into the bowl and mix together.
