Ingredients
- 6 short ribs
- 1/2 cup apple cider vinegar
- 4 tbsp minced garlic
- 2 tbsp ground black pepper
- 2 tbsp salt
- 6 tbsp lime juice
- 3/4 tbsp grounded cloves
- 4 bay leaves
- 6 Chipotle chilis in adobo
- 6 tbsp sofrito (or marinara with garlic spices etc)
- 2 pimentos (5 tbsp chopped pimento)
Directions
- Mix all sauce ingredients except bay leaves in blender then set aside
- Pre-sear short ribs
- Vacuum seal short ribs along with the sauce and bay leaves. Double seal ends and double bag!
- Weigh the meat down in water bath to prevent from floating.
Finishing Steps
- Drain juices into bowl. Remove meat from bags and remove bones. Use forks to separate the meat, then add meat into the bowl and mix together.
