Ingredients for 1

  • Venison steak, 1/2 lb

  • 3-4 strips thin sliced bacon

  • 1/2 tsp herbed salt of choice (we used a homemade mix of sea salt, garlic, black pepper, sage and thyme)

  • 1 tsp olive oil for coating and sauté pan

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 125.0ºF / 51.7ºC.

  • Step 2

    Rub venison steak with herbed salt of choice and then wrap in bacon, prepare in bag of choice

  • Step 3

    Cook in sous vide bath for 1 hr, remove from bath and let rest in bag for 2 min. Heat skillet with just enough oil to coat pan.

  • Step 4

    Sear in hot skillet until bacon crisped on the outside. Rest another 5 min, slice and serve
