Bacon Wrapped Venison Steak

Ingredients
- Venison steak, 1/2 lb
- 3-4 strips thin sliced bacon
- 1/2 tsp herbed salt of choice (we used a homemade mix of sea salt, garlic, black pepper, sage and thyme)
- 1 tsp olive oil for coating and sauté pan
Directions
- Set your Anova Sous Vide Precision Cooker to 125.0ºF / 51.7ºC.
- Rub venison steak with herbed salt of choice and then wrap in bacon, prepare in bag of choice
- Cook in sous vide bath for 1 hr, remove from bath and let rest in bag for 2 min. Heat skillet with just enough oil to coat pan.
- Sear in hot skillet until bacon crisped on the outside. Rest another 5 min, slice and serve
