Bacon cheese hatch green chilie egg bites

Ingredients for 4
4 Eggs
4 egg whites
one can of hatch green chilies
2oz grated cheddar cheese blend
2 ounces Gruyere cheese
2 tbl butter
8 oz low fat cream cheese (Neufchatel)
4 slices bacon cooked and chopped bacon
hot sauce, as hot as you like it
Cooking spray
10, 4 ounce mason jars with lids

Step 1 1. Preheat Anova sous-vide water bath to 172°

2. Cook bacon (works best if slightly undercooked). Drain and set aside. (I use Kirkland pre-cooked.)

3. Combine eggs, , Monterrey jack, Neufchatel cheese (low fat Cream cheese), butter, and Tabasco sauce and blend with an blender until smooth and creamy.

4. Spray with cooking spray the insides of 8-10, 4oz Mason jars with lids. Divide the Gruyere, bacon and 1 teaspoon each jar among the 8 - 10 jars and add to the bottom.

5. Divide egg batter evenly among jars, leaving 1/4 inch empty at the top. Hand tighten lids, do not over tighten, the jars will break. place in sous-vide bath.

6. Remove jars after 2hrs from water bath.

7. (Optional) Preheat oven or toaster oven to 450. When cooled enough to handle, invert contents of jar onto a parchment lined baking sheet, and bake until lightly browned.

Notes, You should see tiny bubbles emerge from each jar as you lower it into the water. This is OK as it’s releasing its pressure. Enjoy, serves 4-5 Approximate calorie count 149 per egg bite
