Which relatively easy recipe is also lower in calorie to some of the other egg bite recipes that are out there, doing part to the lower-fat cream cheese the egg whites. When I put all ingredients and serving size into the recipe app I have it came out with approximately 149 cal per serving. That’s why you’ll see two as a serving size because that still keeps you under 300 cal. I like to serve mine in the French style with a small green salad and it’s excellent. enjoy send feedback

  1. Step 1 1. Preheat Anova sous-vide water bath to 172°
  2. 2. Cook bacon (works best if slightly undercooked). Drain and set aside. (I use Kirkland pre-cooked.)
  3. 3. Combine eggs, , Monterrey jack, Neufchatel cheese (low fat Cream cheese), butter, and Tabasco sauce and blend with an blender until smooth and creamy.
  4. 4. Spray with cooking spray the insides of 8-10, 4oz Mason jars with lids. Divide the Gruyere, bacon and 1 teaspoon each jar among the 8 - 10 jars and add to the bottom.
  5. 5. Divide egg batter evenly among jars, leaving 1/4 inch empty at the top. Hand tighten lids, do not over tighten, the jars will break. place in sous-vide bath.
  6. 6. Remove jars after 2hrs from water bath.
  7. 7. (Optional) Preheat oven or toaster oven to 450. When cooled enough to handle, invert contents of jar onto a parchment lined baking sheet, and bake until lightly browned.

Finishing Steps

  1. Notes, You should see tiny bubbles emerge from each jar as you lower it into the water. This is OK as it’s releasing its pressure. Enjoy, serves 4-5 Approximate calorie count 149 per egg bite
