Ingredients for 0

  • 2 racks of pork baby back ribs

  • Barbecue sauce

  • Tomato ketchup

  • One head of garlic, split lengthways

  • Smoked paprika, enough to sprinkle over the ribs

  • Worcestershire Sauce

  • Salt

  • Pepper

Directions

  • Step 1

    Season the racks of ribs well with salt, pepper and smoked paprika, leave for 20 mins to allow the seasoning to soak in

  • Step 2

    Cut the racks of ribs into smaller pieces, 2 or 3 ribs per piece, insert into Anova bags

  • Step 3

    Into each bag add 2 tbsps each of tomato ketchup and barbecue sauce and a splash of Worcestershire Sauce

  • Step 4

    Place into water bath, 75C for 24 hours
