  1. Season the racks of ribs well with salt, pepper and smoked paprika, leave for 20 mins to allow the seasoning to soak in
  2. Cut the racks of ribs into smaller pieces, 2 or 3 ribs per piece, insert into Anova bags
  3. Into each bag add 2 tbsps each of tomato ketchup and barbecue sauce and a splash of Worcestershire Sauce
  4. Place into water bath, 75C for 24 hours
