  • 3lb Tri-Tip Roast(s)

  • Dry brine in refrigerator for 24-48 hours.

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 132ºF / 55.6ºC

  • Step 2

    Vacuum bag the roast(s). 

  • Step 3

    Sous vide roast(s) for 26 hours. 

    • Finishing Steps

    • Step 0

      Remove from vacuum bag and pat dry.

    • Step 1

      Blow torch all over the roast(s) until crust develops to your satisfaction.

    • Step 2

      Carve thinly and serve on buns with (or without) a sharp cheddar sauce.
