Ingredients
- 3lb Tri-Tip Roast(s)
- Dry brine in refrigerator for 24-48 hours.
Directions
- Set your Anova Sous Vide Precision Cooker to 132ºF / 55.6ºC
- Vacuum bag the roast(s).
- Sous vide roast(s) for 26 hours.
Finishing Steps
- Remove from vacuum bag and pat dry.
- Blow torch all over the roast(s) until crust develops to your satisfaction.
- Carve thinly and serve on buns with (or without) a sharp cheddar sauce.
