Dry brine to taste in refrigerator for 24-48 hrs
Directions

Step 1
Set your Anova Sous Vide Precision Cooker to 132ºF / 55.6ºC

Step 2
Vacuum bag the roast(s).

Step 3
Sous vide for 26 hours at 132F (55.6C).

Adding Crust

Remove from vacuum bag.

Blow torch a crust to your satisfaction.

Carve and serve on buns with or without sharp cheddar sauce to your taste.
