Ingredients
- 3lb Tri-tip Roast
- Dry brine to taste in refrigerator for 24-48 hrs
Directions
- Set your Anova Sous Vide Precision Cooker to 132ºF / 55.6ºC
- Vacuum bag the roast(s).
- Sous vide for 26 hours at 132F (55.6C).
Adding Crust
- Remove from vacuum bag.
- Blow torch a crust to your satisfaction.
- Carve and serve on buns with or without sharp cheddar sauce to your taste.
