Angus sirloin steak
Sea salt
Black pepper
1/4 cup dry red wine
Butter for searing

Step 1
Set your Anova Sous Vide Precision Cooker to 134.0ºF / 56.7ºC.

Step 2
Season steaks liberally with salt and black pepper

Vacuum seal individually

Step 4
Cook in sous vide bath for two hours

Stove Top Sear

Remove steaks from bag and dry, reserving fluid

Step 1
Sear dried steaks in butter in cast-iron pan for roughly 1 minute per side

Remove steaks and add bag juice to pan

Step 3
Add 1/4 cup of dry red wine and heat

Serve alongside steaks as au jus as well as for french fries or mashed potatoes
