Ingredients
- Angus sirloin steak
- Sea salt
- Black pepper
- 1/4 cup dry red wine
- Butter for searing
Directions
- Set your Anova Sous Vide Precision Cooker to 134.0ºF / 56.7ºC.
- Season steaks liberally with salt and black pepper
- Vacuum seal individually
- Cook in sous vide bath for two hours
Stove Top Sear
- Remove steaks from bag and dry, reserving fluid
- Sear dried steaks in butter in cast-iron pan for roughly 1 minute per side
- Remove steaks and add bag juice to pan
- Add 1/4 cup of dry red wine and heat
- Serve alongside steaks as au jus as well as for french fries or mashed potatoes
