Ingredients for 0

  • 2 tbsp salt

  • 1 tbsp brown sugar

  • 1 cup water

  • Around 500g of chicken breast (2 fillets)

  • 1 knob ginger (sliced as thin as possible and skin off)

  • 4 spring onion stalks (chopped into 2 inch pieces)

  • 1 tbsp soy sauce

  • 1 tsp sesame oil

  • 1 tsp Brown sugar

  • 1/2 tbsp chilli oil

  • 1 juice of a lime

  • 2 tbsp light soy sauce

  • 1/4 tsp Brown sugar

  • 1 cup chopped spring onions (about 2 inch pieces)

  • 1/4 cup crushed/grated ginger

  • Chicken drippings from bag

  • 1 cup japanese rice

  • 1.5 cups water

Directions

  • Step 1

    First... brine the chicken by mixing 2 tbsp salt, 1tbsp brown sugar and 1 cup of water then put 2 pieces of chicken fillet in a plastic ziploc bag along with the mix and ensure the chicken is in the liquid.

  • Step 2

    Place the ziploc bag in the fridge and refridgerate for no less than 45 minutes

  • Step 3

    Whilst chicken is in fridge, set your sous vide to 63.5°C

  • Step 4

    Start peeling and chopping the ginger and chopping the spring onions. If done early place in bowl and wait till 45min has passed

  • Step 5

    Once 45min has passed remove chicken from fridge, place one fillet in cold water and rinse off mixture then dry with paper towel.

  • Step 6

    Place in another ziploc bag and repeat with the second fillet.

  • Step 7

    Place the chopped ginger and spring onions into the bag with the chicken

  • Step 8

    Whisk together 1tbsp soy sauce, 1tsp of brown sugar and 1tsp of sesame oil and place in ziploc bag with the chicken. Shake the bag and ensure everything is covered with the liquid

  • Step 9

    Place ziploc bag into sous vide using immersion method and set timer for 1.5hrs (you may want to use weights as chicken may come up to surface)

  • Step 10

    When the chicken gets to around the 15-20min to go mark, start rinsing 1 cup rice and putting 1.5 cups of cold water into rice cooker. Start rice cooker.

  • Step 11

    Start making Bryce's Spicy Sauce □ Get a mixing bowl and place 1/2tbsp of chilli oil and 1 juice of a lime into the bowl □ Next add 1/2 cup chopped spring onions into same bowl and 1/4 cup grated/crushed ginger □ Last but not least add 2tbsp light soy sauce and 1/4 tsp Brown sugar. □ When the chicken is done pour the sous vide chicken liquid into the bowl and remove chicken from the bag to a cutting board. Whisk the sauce until mixed completely.

      Get 2 nice pretty bowls and split rice in half so you can pour half in one bowl and half in the other Place chicken on top of rice... can be cut into slices or placed straight into bowls Pour half the sauce on one bowl and half on the other and enjoy!
