This is a copycat recipe of Starbucks bacon gruyere egg bites. It took several tries to get the ratios right, but this one knocks it out of the park. *The flavor is only exactly right if you use dry heat to melt the cheese and exterior after cooking, as Starbucks does when they are warmed.

Ingredients for 4

  • 8 eggs

  • Mounded 1 cup cottage cheese

  • Scant 1 cup shredded Monterrey jack cheese

  • 2 oz shredded Gruyere cheese

  • 2 tbsp softened, unsalted butter

  • 8 slices cooked bacon

  • 3-4 dashes of Tabasco sauce

  • Non-stick cooking spray

  • 8 - 4oz Mason jars with canning lids

Directions

  • Step 1

    1. Preheat Anova sous-vide water bath to 172 degrees F. 2. Cook bacon (works best if slightly undercooked). Drain and set aside. (Or buy the pre-cooked variety.) 3. Combine eggs, cottage cheese, Monterrey jack cheese, butter, and Tabasco sauce and blend with a hand blender until fairly smooth. 4. Grease the insides of 8 - 4oz Mason jars with lids. Divide the Gruyere among the 8 jars and add to the bottom. 5. Break up bacon as desired and place one full piece per jar on top of Gruyere cheese. 6. Divide egg batter evenly among jars, leaving 1/4 inch empty at the top. Hand tighten lids and place in sous-vide bath. 7. Remove jars from water bath. 8. (Optional) Preheat oven or toaster oven to 450. When cooled enough to handle, invert contents of jar onto a parchment lined baking sheet. Bake for 5-7 minutes until cheese is slightly browned.
