Ingredients for 10

  • • 2 kg of organic chicken breast

  • • 4 Dry wide chile (Chile Ancho Seco)

  • • 6 Dry wide guajillo chile (Chile Guajillo Ancho Seco)

  • • 2 Dry thin guajillo chile (Chile Guajillo Delgado Seco

  • • 6 Grains of whole black pepper

  • • 6 Cloves

  • • 1 Spoon of oregano powder

  • • 1 ½ Cup of orange juice

  • • 3 Spoons of white vinegar

  • • 2 inches of fresh ginger

  • • 1 Spoon of himalayan salt

  • • ¼ of Axiote bar or 2 ½ spoons of liquid Axiote

  • • 2 Pieces of canned chipotle chile

  • • 2 splashes of Maggi Sauce

  • • 1 Chopped onion

  • • 2 Medium claws of garlic

  • • 10 Slices of pineapple

  • • 1 bush of coriander

  • • 10 green lemons

  • • 1 bottle of Mexican green salsa

  • • 1 kg of Mexican corn tortillas

Directions

  • Step 1

    Blend the following ingredients to make Al Pastor sauce • 2 kg of organic chicken breast • 4 Dry wide chile (Chile Ancho Seco) • 6 Dry wide guajillo chile (Chile Guajillo Ancho Seco) • 2 Dry thin guajillo chile (Chile Guajillo Delgado Seco) • 6 Grains of whole black pepper • 6 Cloves • 1 Spoon of oregano powder • 1 ½ Cup of orange juice • 3 Spoons of white vinegar • 2 inches of fresh ginger • 1 Spoon of himalayan salt • ¼ of Axiote bar or 2 ½ spoons of liquid Axiote • 2 Pieces of canned chipotle chile • 2 splashes of Maggi Sauce • 1 Chopped onion • 2 Medium claws of garlic

  • Step 2

    Slice the chicken breast into a fajita style cut

  • Step 3

    Once you have the Al Pastor sauce integrated, pour into a Pyrex container with the chicken breast slices and blend evenly

  • Step 4

    Slide the chicken breasts and sauce into Ziplock bags and add the remaining ½ orange juice cup with the pineapple slices.

  • Step 5

    Bring the Pre-heat the Precision Cooker to 60 Celsius Degrees

  • Step 6

    Seal the Ziplock bags using the water displacement method to remove the air before dropping the bag into the water bath

  • Step 7

    Drop the Ziplock bags and cook at 60 Celsius degrees for 2 hours.

  • Step 8

    When the Precision Cooker timer stops, place the bags into cold water to stop the cooking process.

    • Finishing Steps

    • Step 0

      Pour the content of the Ziplock bags into a pre-heated pan or grill with very small amount of olive oil to seal the chicken breast and achieve the desired temperature

    • Step 1

      Plate the chicken breast with the remaining chopped onion, coriander, slices of cooked pineapple, green sauce, slices of green lemon and corn tortillas. Make your own Organic Chicken Al Pastor Taco by mixing these elements to your desire. Enjoy!
