1 chuck roast
Your choice of searing oil
Set Anova Sous Vide Precision Cooker to 135°F / 57.2*C
Season roast liberally with salt and pepper and place in a vacuum bag.
Place in water bath and sous vide for 30 hours.
Remove roast from bag, dry thoroughly with paper towels.
Heat a cast-iron skillet over high heat, and add oil to pan until smoking.
Place chuck roast in pan and sear for 1 minute per side, and edges.
Slice, and serve!
