Ingredients for 6
3 full rack 4 bone beef short ribs
Rub 1/2 coarse salt and 1/2 coarse pepper
Directions

Step 1
Trim and remove any hard fat and silverskin. Rub olive oil all over ribs as a binder for dry rub. Spread evenly salt/pepper mixture on ribs. Optional add stick of rosemarry with ribs in vaccum sealed bag.

Sous vide ribs for 12hrs @ 172.5

Remove ribs and cool under ice for 1hr. Re apply rub salt and pepper.

Finishing Steps

Step 0
Put ribs in smoker for 3 to 5 hrs at 225. Spritz ribs with apple cider vinegar every hour. Remove ribs once internal temperature reaches 205 F. Rest ribs for an hour wrapped in butcher paper until temp is reduced to 165. Can keep ribs in cooler until ready to serve.
