Ingredients for 3

  • About 2 pounds bone-in beef short ribs

  • 1 thinly sliced onion

  • I cup Guinness Stout

  • 3 sprigs thyme

  • 2 tablespoons tomato paste

  • 4 cloves garlic, crushed

  • 1 teaspoon balsamic vinegar

  • 3 teaspoons freshly ground peppercorns

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 180ºF / 82.2ºC

  • Step 2

    Place the trimmed short ribs in a smoker for about 2 hours at very low temperature 160-180.  This step can be skipped and I am not that sure much flavor was added by the smoking as the marinade was exceptional Place the ingredients and the ribs into a vacuum sealed bag and SV for 24@180.  If you have smoked the ribs you can cut down this time.  I had smoked so I only did 23 hours.

      Remove the ribs and pour liquid into a sauce pan.  Begin to reduce about half of the liquid until it is coating your spoon. Place the ribs on either a broiler set high or grill.  Sear for approx 1 to 2 minutes a side if on high heat grill.

      Serve with the marinade as a sauce and can be used as a gravy.
