Prime Rib Roast
Kosher Salt
Crushed Garlic
Black Pepper
Olive Oil

Step 1
Take roast and pat completely dry. Season generously with Kosher salt. Place on wire rack to season/age in a cool place for at least 8hrs, I prefer 18-24hrs. About 30 minutes before cook time let roast rest on counter to allow it to come up to a decent temperature. 10mins before cook time season then bag and allow roast to sit before submerging. Cook for about 2.5 to 3 hours at desired temperature for your preferred doneness. Preheat oven on Broil setting or whichever way you like to add your sear. I like the roast to be between Rare and Medium Rare. Once cooked to temperature and time remove from heat, pat dry then place Roast fat side up to sear. Cook until fat cap starts to render and brown. Remove from over. And allow to rest before carving. ENJOY!!!
