Ingredients for 5
3kg Pichana
Corse Salt and pepper
3 garlic gloves sliced

Step 1
Season the meat with salt and pepper and place in the bag. Slice the garlic and place it in the back side of the meat not the fat side. Then place it in the bag and vacuum seal it.

Finishing Steps

Take the meat out of the bag and remove any juices with a paper towel. Then place it in the pan with a grill so it doesn’t touch the pan itself.

Step 1
Put it in a preheated oven at 230 degrees Celsius with top grill element only. Leave it for 10-15 minutes until the fat is browned.

Step 2
Take it out of the oven and let it rest for about 10-15 minutes.

Step 3
Slice on a butcher block with a very sharp knife and salt when served as per taste..
