• Forgot to thaw your meat?! Just got home and don’t have anything to cook? Are the kids being annoying? • No problem, just add and extra 30 minutes! In this recipe, I’m using a ribeye cut. However, the temp and time will work for all normal size steaks (1-2”)

Ingredients for 1

  • Ribeye Steak (1.5”)

Directions

  • Step 1

    Heat to 129*F

  • Step 2

Retrieve frozen steak from freezer. Keep in Ziploc freezer bag or vacuum sealed packaging.

  • Step 3

    Place steak directly in water.

  • Step 4

Take out of water after 1 hour and 20 minutes. Steak is fully cooked at this point

    • Finishing Steps

    • Step 0

Dry steak with paper towels and season to your preference. (I prefer to season with just salt and pepper.)

    • Step 1

Preheat pan (or grill) on high just before searing steak.

    • Step 2

Briefly sear steak on both sides. It’s ok to sear any fatty areas a little longer. If pan searing, use a high temp oil. For its flavor, I prefer to use clarified butter which has a smoke point around ~500°F. However, oils such as avocado (~520°F) and canola (~450°F) will do just fine. Remember: The steak is already fully cooked. Searing is mostly for visual presentation (e.g color, grill marks, etc.)

    • Step 3

Serve immediately with your vegetable of choice!
