While it’s not the cheapest cut of meat, if you live in the United States, I would highly recommend purchasing USDA Prime beef. USDA Prime beef is produced from young, well-fed beef cattle. Ingredients for 1

  • 8-10 oz. Beef Filet

  • 4 Tablespoons of Softened Butter

  • Generous Pinch of Parsley

  • Generous Pinch of Pepper

  • Generous Pinch of Salt

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 150.5ºF / 65.8ºC.

  • Step 2

    Coat the Beef Filet with a generous layer of softened butter.

  • Step 3

    Season both sides of the meat with a large pinch of parsley, pepper and salt.

  • Step 4

    Bag and vacuum seal the seasoned filet and add it to the preheated pot of water with your precision cooker.

    • Step 0

      About 15-20 minutes before the filet is finished cooking with the precision cooker, preheat the oven on high broil.

    • Step 1

      About 5 minutes before the filet is finished cooking with the precision cooker, preheat a skillet (preferably cast iron) on the stovetop at medium heat.

    • Step 2

      Once the filet is finished, add a small amount of butter to the skillet (to prevent sticking), remove the steak from the vacuum sealed bag and add it to the preheated skillet.

    • Step 3

      Quickly sear both sides of the steak for about 1-2 minutes on each side.

    • Step 4

      While still in the skillet add a teaspoon of parsley infused butter on top of the filet and place the entire skillet into the preheated oven for another 1-2 minutes. (Be sure to watch it closely. Do not char or overcook the filet.)

    • Step 5

      Remove from the oven, plate and enjoy!
