Ingredients for 8
7-8 lb Eye of Round
5 cloves of garlic minced
2 Tbs. rosemary minced
4 Tbs. Worcestershire sauce
2 Tsp. Smoked Paprika
1 Tsp. Mustard Powder
1 Tsp. Onion Powder
5 Tsp Salt
1 Tbs. Course Black Pepper
Directions

Step 1
Set Sous Vide water to 137.5

Step 2
Brush Roast liberally with the Worcestershire Sauce and let sit for one hour at room temperature to become sticky so rub will adhere.

Step 3
Rub all sides of the roast with all of the rub mixture .

Step 4
Put Roast in vacuum bag or zipper Bag.

Step 5
Put in water bath and cover container with plastic wrap to prevent evaporation.

Cook 31 Hours

Finishing Steps

Remove from water bath saving all juices.

Step 1
Pat dry roast

Step 2
Sear all sides on very hot barbecue

Let rest 10-15 minutes

Make au jus or gravy

Slice crossed grain in very thin slices for French Dips or thicker for meat and your favorite potatoes. Left overs make great fajitas or steak tacos, and of course my favorite beef stroganoff .
