Ingredients for 4

  • Favorite BBQ or basting sauce. I find a fruit flavored bbq is best on Deer.

  • 2 Deer Tenderloins

  • Salt & Pepper

  • 1 Tbl Oregano

  • 1 Tbl Garlic Powder

  • 1 Tbl Onion Powder

  • 2 Tbl Soy Sauce

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 129.5ºF / 54.2ºC

  • Step 2

    Sprinkle the tenderloins with salt, pepper (I like to use fresh ground), and the other seasonings....season to taste as you would your favorite steak. If you like simple, use Montreal Steak Seasoning instead. The oregano helps cut down the any game flavor.

  • Step 3

    Add the seasoned tenderloins to your sous vide bag and add the soy sauce - 1 to 2 Tbls. If you don't like soy sauce, use Italian dressing. The soy or vinegar will help the flavor.

  • Step 4

    Add to Sous Vide at 129.5 for 2 hours.

    • Finish on the Grill with basting sauce

      Remove from bag and put on the grill for 3-5 minutes per side. I did about 5 minutes on one side, turned them over, basted with my favorite pineapple sauce, and left for only another 2 minutes to warm the sauce. (I used Pampered Chef Spicy Pineapple Rum Sauce here, but I've also used a Raspberry Chipotle on them which is also very good)

      The tenderloins were as tender as room temperature butter and cooked to a med-rare.
