This is a great twist on a classical dish. Serve with baguette, mustard, a fruit chutney and Pickles. The pork in the recipe cuts the strong flavor of the turkey without taking away from the flavor. There is no added fats unlike a traditional terrine, which makes this an incredible delicious healthy dish.

Ingredients for 0

  • 1 lbGround Turkey

  • 1lb Ground Pork

  • 1 Finely diced onion

  • 1tsp Fresh Thyme Leaves

  • 1/2tsp Fresh chopped Sage

  • 1oz Brandy

  • 2oz dried cranberries

  • 2 oz Chopped Pistachios

  • 1 bulb roasted garlic peeled and coarsly chopped

  • 2Tbsp Fresh Parsley

  • Salt and Pepper

  • Prosciutto Ham

Directions

  • Step 1

    Gently Sauté the onions until translucent. Approximately 7 or 8 minutes. Add the Thyme, Sage and Brandy and Flambé. Toss in the cranberries and set aside to cool.

  • Step 2

    In a large mixing bowl thoroughly mix the ground turkey and pork. Gently fold in all of the other ingredients except for the Prosciutto.

  • Step 3

    Place the mixture onto a sheet of cellophane and roll tightly. Twist the ends to ensure there are no air pockets. On another sheet of cellophane carefully lay out the Prosciutto in an area large enough to wrap around your roll. Carefully unwrap the mixture and place it on the ham and tightly roll the ham around the filling and twist off the ends of the cellophane.

    Place the roll in a sealable bag and place into the Bath.

      After the 5 hour cook time gently open one end of the roll and isnert a thermometer to check doneness. I like to see 160°F as this is served chilled. If it is done remove from. The sealable bag and place in the refrigerator over night or until it is thoroughly cold. Serve on a charcuterie board and impress the people around you with it's presentation.
