Ingredients for 2

  • Double cut pork chop (this recipe also works with any other kind of pork chop as well)

  • 11 oz can chipotle peppers in adobo sauce

  • 2 tbsp honey

  • 2 garlic cloves

  • 2 tsp ground cumin

  • 1 tsp dried oregano

  • Cotija cheese

  • 1 lime

  • Cilantro, chopped for garnish

  • Salt and pepper

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 135ºF / 57.2ºC

  • Step 2

    Combine can of chipotle in adobo, garlic cloves, cumin, and oregano in food processor and puree until smooth

  • Step 3

    French cut your pork chop (optional) and season with salt and pepper

  • Step 4

    Place your pork chop into your bag and combine it with half of the sauce that you pureed. Place it into the bath and cook for 3 hours

      When the pork chop is done cooking, pour the bag juices into a saucepan over medium high heat. Add the remaining the sauce, honey, and juice from lime to the pan. Reduce the liquid until it's thick and sticky. Remove from heat.

      Get your grill HOT and make sure the grates are well oiled. Sear the pork chop on all sides while basting with the adobo glaze you just made. Continue searing and basting until nicely browned, about 2-3 minutes total

      Serve with chopped cilantro and cotija cheese along with any other desired sides. I served this chop with corn elotes and extra adobo sauce.
