Ingredients for 2

  • 500 gr. Chicken Heart (clean)

  • 350 ml. Pilsen beer

  • 1 tbsp Garlic powder

  • 100 gr. Onions (chopped)

  • 50 gr. Parsley (chopped)

  • 2 tbsp mustard

  • 1 tbsp sweet paprika

  • 2 tbsp white wine vinegar

  • Salt (fine)

  • Black Pepper (grounded)

  • 1 tbsp butter

Directions

  • Step 1

    It's simple. Just mix everything together in a vacuum bag and carefully remove the air.

  • Step 2

    Let it marinate for 24 hours in the fridge.

  • Step 3

    Start your Anova and set to 81ºC (177.8º Fahrenheit) for 2 hours

  • Step 4

    Once it's done, separate the liquid from the chicken hearts and set them aside

  • Step 5

    In a hot pan, put the liquid and let it reduce until the onions start to get caramelized

  • Step 6

    In a hot frying pan, add the butter and brown the hearts (very quick!) If you let your hearts to much in the pan, they will get too stiff and we don't want it! ;)
