Ingredients for 0

  • 2 cups water room temperature

  • 1 envelope dried yeast (8gr)

  • 2 tbsp sugar or honey ( works both ways)

  • 4 cups flour

  • 1 tbsp salt

  • 1 cup walnuts

  • 1 cup dried cranberries

  • 2 tbsp olive oill

  • You can replace walnuts and cranberries to any other ingredient of your liking or just plain it’s up to you

Directions

  • Step 1

    Set Anova to 99F In a bowl of your choice add water sugar or honey and yeast Cover bowl with plastic wrap and place it into water bath to activate yeast for 30 min until it becomes foamy.

  • Step 2

    In another bowl add all dried ingredients Flour Salt Walnuts Cranberries Mix well all ingredients together with a spoon

  • Step 3

    When yeast mixture is ready add it with the dried ingredients and mix with a spoon You can use a mixer or your hands to mix it’s up to you Mixture might be a bit sticky but no worries while proofing it will get to the desired consistency

  • Step 4

    Cover the bowl with the dough with plastic set Anova to 92F ( add a couple of ice cubes or cold water to bring down temperature from 99F that was set previously) Place bowl in water and let dough proof for 1 hour 30min or until it doubles its size.

  • Step 5

    Preheat oven to 425F and place a Dutch oven in it to heat it up. If you do not have a Dutch oven you can use and baking tray but you will have to place a metal bowl with water so it creates steam to get a better crust. No water needed if you are using a Dutch oven When dough doubled its size you are ready to bake. At this point we ad the 2 tablespoons of oil in Dutch oven that prevents sticking plus a better crust. Cover Dutch over with lid and bake for 45 min. If you are not using a Dutch oven then bake for 30 -35 min.

  • Step 6

    When 45 min go by then remove lid and turn of over and let bread for 10 more minutes to give a better colour and better crust. Remove from oven and let it cool Down for 20 min. Then you will be able to remove bread from Dutch oven. Let bread sit for an hour before you slice it Enjoy
