Olive oil
Topside beef
Salt
Pepper
Thyme
Vegetable oil
Directions

Step 1
Set beef aside and get to room temp

Set your Anova Sous Vide Precision Cooker to 125.6ºF / 52.0ºC.

Generously season topside with salt, pepper and thyme and rub with olive oil

Vacuum seal and drop in the water

Skillet Sear

Pour out excess liquid (save for a nice gravy)

Heat a skillet with vegetable oil until smoking or oil is shimmering

Pat topside dry with a paper towel

Use metal tongs to sear all sides

Cut and serve!
