Ingredients for 2
1-1/4 lbs dry sea scallops
1/4 cup scallions, sliced
1/4 cup Thai sweet chili sauce
Juice of 1/2 lime
3 tablespoons orange juice
Zest of 1 orange
1 tablespoon fresh ginger, very finely chopped
1 tablespoon garlic, very finely chopped
2 tablespoons butter
Directions

Step 1
Set your Anova Sous Vide Precision Cooker to 123ºF / 50.6ºC

Step 2
Wash and througly dry scallops with paper towels

Step 3
All all ingredients to Ziploc or vacuum sealer bag, leaving space between scallops

Step 4
Add scallops to sous vide bath and bathe for 30 minutes

Step 5
Take scallops out of sous vide bath and reserve liquid for later

Sear 30-60 Seconds Per Side In Cast Iron Skillet
