2 x 8 rib racks of lamb
Directions

Step 1
Set your Anova Sous Vide Precision Cooker to 135.0ºF / 57.2ºC.

Set timer for 3 hours.

Cut racks into 4 x 4 rib sections.

Step 4
Spread olive oil and salt and pepper to both sides.

Step 5
Add one section along with sprig or rosemary to ziplock bag. Remove air and seal.

Step 6
Add bags to water and cook for 3 hours at 135*F.

Step 7
Once complete, remove racks and pat dry.

Step 8
Sear both sides at high heat in olive oil and butter for 1 minute per side.

Step 9
Separate each section into 2-rib sections and plate with garnish/ veg.
