  1. Pat ribs dry, message with Olive Oil, generously season all sides with salt and pepper, Pre-heat cast iron skillet, and sear ribs on all sides, set aside to rest. Place 3-4 ribs in each vacuum seal Sous Vide bag/sleeve add 1/2 tsp liquid smoke (your favorite flavor) seal and place in bath at 55.5 for 38-48hrs.

Finishing Steps

  1. Remove from bath to ice bath to cool, remove from vacuum and warm for service baste with sauce allow to caramelize and serve; If freezing for later use, leave in vacuum pack and remove from ice bath to freezer when cooled, reheat in bath at 55.5c or allow to thaw fully and proceed as above.
