  1. Place brats in vacuum bag (or ziplock by submersion method) with onions. Add about 9 oz of beer and remove air from bag.
  2. Refrigerate overnight if possible, or 3 hours, or not at all.
  3. Sous vide at 150 degrees Fahrenheit for 90 minutes.

Finishing Steps

  1. Bring charcoal grill to 300-350 degrees Fahrenheit.
  2. Finish brats as usual on grill, turning after 10 minutes to obtain a golden brown color and grill marks.
