Off-the-shelf, pre-marinated, no-prep chicken for whatever you want to do with chicken breasts. Low temperature results in softest results. Increase temperature to tighten it up.

  1. Bag and go. Note: do not use Wegmans’ packaging. Although somewhat vacuum sealed, it’s not tight enough and the back-side will not conduct heat as well as the front-side resulting in potentially undercooked chicken.

Finishing Steps

  1. If planning to plate the chicken: need to sear it. Sear on lightly oiled, super hot bbq grill 1 to 2 minutes each side, rotating 45° once on each side to get the crisscross effect. Do not try to pan sear. Without skin it doesn’t work
