Ingredients
- Premium Wagyu Ribeye Steak (800grams)
- Smashed garlic
- Thyme
- Rosemary
- Salt
- Pepper
- Olive oil (for seasoning steak)
- Macadamia nut oil (or any other with high smoke point)
Directions
- Drizzle olive oil over the steak (both sides) and add salt and pepper
- Take a whole garlic clove (per steak), place it on a hard surface then crush with the palm of your hand. Place it in the middle of your steak, add the rosemary and thyme
- Place the steak into a large zip lock bag or vacuum seal bag (1 bag per steak) and seal using either water immersion technique or a vacuum sealer.
- Once water is up to temperate submerge the steaks and cook for 2 hours at 60 degrees Celsius/140 degrees Fahrenheit
Finishing Steps
- Once cooked, remove the steaks from the water bath. Heat a skillet extremely hot and add the steaks for 30-40 seconds each side.
